You have a very interestesting perspective and are in a fascinating field - medical sociology.
I watched the "Food Matters" trailer. So true that we're poisoning our environment, and then complaining about being sick. Our food no longer has the nutrient content it used to or that it could. Sad. I grow my roses and veggies with organic methods. It's a small start.
